Bottle jack/clockjack

The clockwork bottle jack was used for roasting over the open range.  It was suspended from its bracket over the fire from the mantleshelf.   Meat was hung from the central hook with smaller cuts or bacon fat for basting hung from the balance wheel.  The clockwork mechanism turned the meat clockwise three times and back again to ensure all sides were cooked.
